The brie and rocket pizza is an exquisite gourmet variation of this popular Italian dish. Its main characteristic is the contrast of flavours: a leaf vegetable with a slightly peppery taste and, as a base, the mild flavour of the Brie.
Taking the classic Margherita as a base, we add the Brie and bake the dough at a temperature of 275ºC until the mozzarella and Brie cheeses melt and blend together, producing a really juicy pizza.
The result is a traditional pizza which, after baking, has a unique aroma and golden finish. Just before serving, we complete the dish with a topping of fresh rocket to add a perfect texture, though its presence may go somewhat unnoticed.

Authentic Italian pizza
The new Pizza Viena is an authentic Italian pizza, made in the traditional way like in the best pizzerias, and with the most carefully selected choice ingredients: quality flour, fresh mozzarella, a fresh tomato base, olive oil and the best toppings.
Before reaching the restaurants, our pizzas are rested at a temperature of 2 to 6 degrees for a period of 48 hours, then allowed to ferment at room temperature for 12 hours. Then they are covered with a mild, fresh tomato base and 100% pure mozzarella. The bricks of mozzarella, produced on a weekly basis, are grated on the spot to maintain the natural quality of the cheese and a really stringy texture. Finally, the pizza is baked on refractory stone, as if it were being cooked in a wood-fired oven.
Thanks to the hand stretching process, the pizza has an artisanal elongated oval shape, reminiscent of the classic pizza alla pala. This is a more casual, informal format, which we serve in a special container, ideal for consumption by just one person or to share with the family or friends in an impromptu summer dinner.
