A dish prepared by hand, with traditional Italian dough covered in a red base of fresh tomato, topped by white mozzarella cheese. We round this off with a layer of homemade bacon to give the pizza a powerful taste and crispy texture, and mushrooms, which add a moist and especially juicy touch.
The secret’s not only in the dough.
The result is a crunchy pizza, a hearty and extremely tasty dish thanks to the recipe’s star ingredient: Viena’s homemade bacon, prepared in our own production centre. A recipe aimed at the Vienese with a taste for what’s good.
Authentic Italian pizza
The new Pizza Viena is an authentic Italian pizza, made in the traditional way like in the best pizzerias, and with the most carefully selected choice ingredients: quality flour, fresh mozzarella, a fresh tomato base, olive oil and the best toppings.
Before reaching the restaurants, our pizzas are rested at a temperature of 2 to 6 degrees for a period of 48 hours, then allowed to ferment at room temperature for 12 hours. Then they are covered with a mild, fresh tomato base and 100% pure mozzarella. The bricks of mozzarella, produced on a weekly basis, are grated on the spot to maintain the natural quality of the cheese and a really stringy texture. Finally, the pizza is baked on refractory stone, as if it were being cooked in a wood-fired oven.
Thanks to the hand stretching process, the pizza has an artisanal elongated oval shape, reminiscent of the classic pizza alla pala. This is a more casual, informal format, which we serve in a special container, ideal for consumption by just one person or to share with the family or friends in an impromptu summer dinner.
