All the aroma of Provence in a coca
The Provençal Coca is made with chicken, Brie, roasted pepper and artichoke preserved in oil infused with herbs de Provence. It’s a recipe we added to our menu some years ago, taking our inspiration from the Provence, a region of France rich in aromatic herbs.
The combination of its ingredients makes this coca a consistent dish which stands out for its sensorial characteristics: aromas, textures and flavours. The chicken provides consistency, which is mixed with the creaminess of the Brie, the roasted pepper’s smooth sweetness and the sponginess and scent of the artichokes preserved in olive oil infused with herbs de Provence.
