Origin of the dish

Our recipe is inspired by the traditional quiche, a dish that appeared for the first time in 1600, in northeastern France or, more precisely, Lorraine, and from which its name comes. The original quiche recipe has since evolved into different new variations that have made this a delicacy increasingly popular all over Europe.

Viena’s reinsterpretation

Lovers of Quiche Lorraine are in luck: we have revived Coca Lorraine, the perfect dish for main meals this winter.

Made from roast chicken, our own crunchy bacon pieces, cooked onion, Emmental cheese and aromatic herbs. All these ingredients are combined with the own coca bread, always crunchy.
