Bread production process

Bread is the basic component of our sandwiches and we make every effort to see that our customers always find it fresh. That's why, at the end of 2003, Viena built a bakery for its own exclusive use.

The various varieties of bread consumed in our establishments: small loaves, or round, rectangular or long, thin types of bread are prepared in this plant.

The entire production process of the small, round or rectangular loaves is carried out at the new bakery. The loaves are then shipped to the establishments where the finishing touches are put on them by using the bikinera, a device developed and patented by Viena many years ago.

Viena's characteristic flautes (flutes or a long thin loaf) are prepared at the bakery but an important part of the process (rising and baking) is done in the establishments every two hours.

The diversity of bread and the special touch given by our bikineres are what make Viena's types of bread unique and highly appreciated by our customers.
