El passat dia 15 d'octubre el periodista Mark Bittman va publicar al diari The New York Times - el diari més prestigiós dels Estats Units -, un article on lloa i magnifica un dels entrepans més emblemàtics del Viena: la flauta de pernil ibèric.

Mark Bittman és un reconegut crític gastronòmic americà, autor amb gran èxit de vendes, premiat cinc vegades i que ha venut més d'un milió de còpies amb el llibre The best recipes in the world (Les millors receptes del món); creador de la popular columna setmanal del The New York Times "The minimalist".

The flauta is so good you could fill it with supermarket ham and have the best sandwich you've had this month. It's deep brown, like a perfectly backed baguette. [...] When you take a bite it crackles.
La flauta és tan bona que la podries omplir amb pernil cuit del supermercat i tindries el millor entrepà que has provat aquest mes. És de color marró fosc, com una baguette cuita a la perfecció. [...] Quan hi fas una queixalada fa crec-crec.

The combination of the crisp crust and the tender, chewy interior is nothingless than stunning to someone who's eaten bread arround the world. A bit of tomato is sneared on the bread, adding just the right amount of moisture and acidity.
La combinació de la crosta cuixent i de l'interior tendre i esponjós és simplement extraordinari per a algú que ha menjat pa arreu del món. Al pa s'hi posa una mica de tomàquet, i s'hi afegeix la nota justa d'humitat i acidesa.

So that's the sandwich, [...] I assure you that it's something Ferran Adrià or Joël Robuchon would be proud to serve.
